C&rsquo;est <a href=\"https:\/\/www.hopperslondon.com\/\" title=\"\">un restaurant<\/a>, ou plut\u00f4t plusieurs restaurants maintenant, dirig\u00e9s par Karan Gokani, et qui se situent \u00e0 Londres. Soho, Marylebone, King&rsquo;s Cross&#8230;<\/p>\n\n\n\n<p>Mais avant tout, les hoppers, ce sont des pancakes de noix de coco et de riz ferment\u00e9 typiques du Sri Lanka que l&rsquo;on cuit dans des po\u00ealons profonds comme des bols. Dans ces pancakes croustillants sur les bords et fondants au centre, on peut ajouter soit un oeuf pour le c\u00f4t\u00e9 sal\u00e9, soit du jaggery r\u00e2p\u00e9 pour le c\u00f4t\u00e9 sucr\u00e9. Sal\u00e9, on le d\u00e9guste avec un curry ou un dip de noix de coco \u00e9pic\u00e9 (pol sambol). Sucr\u00e9, on le mange tel quel. Les hoppers sont un plat phare de la cuisine de rue.<\/p>\n\n\n\n<p>Karan l&rsquo;a bien compris et en a fait un \u00e9l\u00e9ment incontournable de la cuisine traditionnelle sri-lankaise qu&rsquo;il propose dans ses restaurants.<\/p>\n\n\n\n<p>Son premier livre est une collection des recettes pr\u00e9f\u00e9r\u00e9es de leurs restaurants mais \u00e9galement d&rsquo;histoires de rencontres, de d\u00e9couvertes des saveurs propres \u00e0 la cuisine sri-lankaise&#8230;<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">LE LIVRE<\/h5>\n\n\n\n<p>Le livre est sorti en anglais en octobre 2022 aux \u00e9ditions Hardie Grant. l\u00e0-dessus aux recettes. Elles sont organis\u00e9es en 11 chapitres. Les snacks, le riz et le pain. On a un chapitre sp\u00e9cial pour les byriani, les kottus, les lamprais ce qui prouve leur importance dans la cuisine sri-lankaise. Les chutneys, sambols, pickles. Les currys, les grillades. Et enfin, les desserts, les boissons et les toppings.<\/p>\n\n\n\n<p>Chaque d\u00e9but de chapitre comporte une mini-introduction. Ensuite, on passe aux recettes proprement dites. Chaque recette a sa propre introduction \u00e9galement. Que ce soit pour expliquer son origine, son nom ou donner des pr\u00e9cisions sur quand et o\u00f9 le plat est g\u00e9n\u00e9ralement consomm\u00e9.<\/p>\n\n\n\n<p>La liste des ingr\u00e9dients est souvent longue, mais contient majoritairement des \u00e9pices. Les ingr\u00e9dients sont bien r\u00e9partis par \u00e9tapes. Les instructions sont claires et tr\u00e8s bien d\u00e9taill\u00e9es. Il n&rsquo;est pas rare que la recette fasse toute la page ou s&rsquo;\u00e9tale sur 2 pages enti\u00e8res. On trouve parfois un QR code \u00e0 scaner pour acc\u00e9der \u00e0 des vid\u00e9os explicatives.<\/p>\n\n\n\n<p>On trouve \u00e9galement des sous-parties sur un ingr\u00e9dient ou une technique de J&rsquo;ai not\u00e9 de nombreuses recettes \u00e0 essayer. Avant de se lancer, l&rsquo;important \u00e9tait de trouver des feuilles de curry fra\u00eeches. Pas facile tout \u00e7a! On peut trouver des feuilles s\u00e8ches relativement facilement sur internet. Mais des fra\u00eeches!!! Il faut partir sur des feuilles surgel\u00e9es. L\u00e0 encore, ce n&rsquo;est pas toujours simple. Allez chercher du c\u00f4t\u00e9 des magasins asiatiques ou indiens&#8230;<\/p>\n\n\n\n<p>Et faites des provisions. Car dans le livre entier sont utilis\u00e9s en tout 1210 feuilles de curry!!!!! Les recettes sans feuilles de curry se comptent sur les doigts d&rsquo;une main&#8230; Bon, j&rsquo;exag\u00e8re un peu, mais pas trop non plus&#8230;<\/p>\n\n\n\n<p>Mais une fois qu&rsquo;on les a trouv\u00e9es, les recettes s&rsquo;offrent \u00e0 nous! <\/p>\n\n\n\n<p>Comme souvent pour la cuisine du continent indien, les recettes sont assez longues. On dirait que le temps a moins d&rsquo;importance pour eux. Ils prennent le temps de laisser les saveurs se marier. Mais quand on le prend, les recettes nous \u00e9blouissent!<\/p>\n\n\n\n<p>Les photos elles aussi sont magnifiques. Elles sont color\u00e9es, vivantes, authentiques. On voit que ce ne sont pas des photos studio pour la plupart, et \u00e7a nous fait vraiment voyager.
