{"id":129,"date":"2020-02-22T19:00:49","date_gmt":"2020-02-22T18:00:49","guid":{"rendered":"http:\/\/culinotopia.com\/?p=129"},"modified":"2020-02-22T19:06:05","modified_gmt":"2020-02-22T18:06:05","slug":"mijote-de-poulet-au-chocolat-croustillant-au-mais","status":"publish","type":"post","link":"https:\/\/culinotopia.com\/index.php\/2020\/02\/22\/mijote-de-poulet-au-chocolat-croustillant-au-mais\/","title":{"rendered":"Mijot\u00e9 de poulet au chocolat, croustillant au ma\u00efs"},"content":{"rendered":"\n<h5 class=\"has-text-color wp-block-heading\" style=\"color:#71767a\"><strong>Recette adapt\u00e9e du livre \u00ab\u00a0Simple\u00a0\u00bb de Yotam Ottolenghi<\/strong><\/h5>\n\n\n\n<p><strong>Ingr\u00e9dients:<\/strong><\/p>\n\n\n\n<pre class=\"wp-block-preformatted\">Pour le mijot\u00e9 de poulet:\n4 cuisses de poulet\n2 oignons\n3 gousses d'ail, hach\u00e9es\n1 pointe de harissa\n2 cuill\u00e8res \u00e0 caf\u00e9 de paprika doux fum\u00e9\n1 cuill\u00e8re \u00e0 caf\u00e9 de sel\n3 cuill\u00e8res \u00e0 soupe d'huile d'olive\n4 tomates\n400ml de passata\n2 gros poivrons rouge\n250ml d'eau\n15g de chocolat noir\n\nPour le croustillant au ma\u00efs:\n500g de ma\u00efs\n70g de beurre\n3 oeufs\n3 cuill\u00e8res \u00e0 soupe de lait demi-\u00e9cr\u00e8m\u00e9\n3\/4 cuill\u00e8res \u00e0 soupe de sel\npoivre\n<\/pre>\n\n\n<p>Dans une sauteuse, chauffer l&rsquo;huile d&rsquo;olive feu moyen-vif. Ajouter les oignons tranch\u00e9s et les faire rissoler jusqu&rsquo;\u00e0 ce qu&rsquo;ils soient dor\u00e9s, environ 8 minutes.<\/p>\n<p>Baisser un peu le feu et ajouter l&rsquo;ail, la harissa, le paprika, le poulet, le sel et quelques tours de moulin \u00e0 poivre. Laisser cuire 5 minutes en remuant r\u00e9guli\u00e8rement, puis ajouter les tomates et les poivrons coup\u00e9s en cubes, ainsi que la passata. Ajouter l&rsquo;eau, porter \u00e0 \u00e9bullition, couvrir et baisser le feu pour laisser mijoter 30 minutes en remuant de temps en temps.<\/p>\n<p>Ajouter le chocolat noir, et pousuivre le cuisson environ 40 minutes \u00e0 d\u00e9couvert en remuant toujours r\u00e9guli\u00e8rement. La cuisson est finie quand la sauce est bien \u00e9paisse et que la chair du poulet se d\u00e9tache facilement.<\/p>\n<p>Servir le poulet tel quel ou fa\u00e7on Parmentier, avec le croustillant de ma\u00efs par dessus. Dans ce cas, r\u00e9server le poulet et sa sauce dans un grand plat qui passe au four.<\/p>\n<p>Pr\u00e9chauffer le four \u00e0 180\u00b0C.<\/p>\n<p>Dans un robot, mixer le ma\u00efs avec le beurre fondu, le lait, les jaunes d&rsquo;oeufs et le sel. A obtention d&rsquo;un coulis \u00e9pais, le r\u00e9server dans un saladier. Monter les blancs en neige et les incorporer d\u00e9licatement au coulis de ma\u00efs.<\/p>\n<p>Verser la pr\u00e9paration sur le poulet et faire gratiner 35 minutes au four en surveillant la cuisson au bout de 25 minutes (couvrir d&rsquo;une feuille de papier alu si le dessus colore trop vite).<\/p>\n<p>Sortir du four et laisser reposer 10 minutes avant de servir.<\/p>\n\n\n<figure
