Pr\u00e9parer le fond de veau en le d\u00e9layant dans un peu d&rsquo;eau \u00e0 part et le verser \u00e9galement dans la sauteuse. Porter \u00e0 \u00e9bullition puis couvrir, baisser le feu, et laisser mijoter environ 2 heures.<\/p>\n<p>Ajouter les olives, \u00f4ter le couvercle et laisser encore mijoter une petite heure.
