Mai 2015, exposition universelle de Milan, Massimo Bottura d\u00e9cide d&rsquo;ouvrir une cantine solidaire pour \u00e9couler les surplus alimentaires de l&rsquo;expo. Ce sera le refettorio Ambrosiano. Le livre retrace les menus \u00e9labor\u00e9s par une 50aine de chefs amis et coll\u00e8gues venus cuisiner pour des enfants ou des personnes dans le besoin.<\/p>\n\n\n\n<p>Le livre est \u00e9dit\u00e9 chez Phaidon, sorti en fran\u00e7ais en janvier 2018. Il est en papier recycl\u00e9 (enfin je crois, en tout cas, c&rsquo;est rare d&rsquo;avoir une impression sur du papier beige, non glac\u00e9, et somme toute assez fin) et est imprim\u00e9 en Italie (alors l\u00e0, bravo!).<\/p>\n\n\n\n<p>Il s&rsquo;articule comme suit. Chaque chef a une section d&rsquo;environ 10 pages qui lui sont consacr\u00e9es. On commence avec une pr\u00e9sentation du chef faite par Massimo Bottura et de la fa\u00e7on dont ils se sont rencontr\u00e9s, comment ils en sont arriv\u00e9s \u00e0 travailler ensemble, les valeurs qu&rsquo;ils ont en commun, etc.<\/p>\n\n\n\n<p>Ensuite, une double page sur les photos prises pendant la pr\u00e9paration du repas, photos de groupe, d&rsquo;ingr\u00e9dients.<\/p>\n\n\n\n<p>Et on passe aux recettes, g\u00e9n\u00e9ralement, une entr\u00e9e, un plat, un dessert. Pour moi, cela fait souvent 2 plats, un dessert, car je trouve que les entr\u00e9es sont plut\u00f4t copieuses et compl\u00e8tes. Toutes les recettes n&rsquo;ont pas de photo, une ou deux par chef, mais ce n&rsquo;est pas d\u00e9rangeant. A noter, des espaces pr\u00e9vus pour prendre des notes dans la page de la recette, pas sur toutes, mais pour la plupart.<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-2 J&rsquo;ai beaucoup aim\u00e9 la philosophie de ce livre. On y apprend comment faire du beau avec des ingr\u00e9dients que tout le monde consomme au quotidien. Ici, pas d&rsquo;\u00e9cume de ceci, ou de farandole de cela. Les plats sont simples, sains, gourmands. Ils sont faits pour nourir et r\u00e9conforter les convives.<\/p>\n\n\n\n<p>De plus, il y a des bonnes id\u00e9es pour utiliser des restes: restes de pain sec, restes de fromage, fruits et l\u00e9gumes ab\u00eem\u00e9s.<\/p>\n\n\n\n<p>Bref, une tr\u00e8s bonne lecture et un bon investissement (droits d&rsquo;auteur revers\u00e9s \u00e0 l&rsquo;assiciation FOOD FOR SOUL).
